It may feel like summer is almost over, but technically we are halfway through. Summer doesn’t end until September 22nd so there is still time to enjoy what it has to offer. These are some things that have kept me feeling good this season. 

Morning walks

I try to walk at between 20 & 40 minutes each morning. A recent NYT article explained that just 10 minutes a day can add years to your life but there are many other benefits.

Walking in morning light helps set the body’s circadian rhythm which regulates your sleep and wake times. Walking moves lymph which is supports our immune system and gets blood pumping to our brains. 

Another benefit of mornings walks is being out in nature. Spending time in nature is linked to both cognitive benefits and improvements in mood, mental health and emotional well-being, according to the American Psychological Association. 

Peppermint & Dandelion Root iced tea

During Fall and Winter, drinking Dandelion tea is grounding and soothing, but during the summer I prefer something more refreshing. This liver-supporting iced tea combining Dandelion root with peppermint tea has been a game changer this summer. I steep 1 bag each in 16 oz hot water for 20 minutes, then refrigerate. 

Benefits of Dandelion tea: Liver support – The liver is responsible for +300 metabolic functions including detoxing and processing excess estrogen. Without proper support, toxins and hormones are recycled in the body causing multiple issues including acne, and fatigue. Dandelion root has also been shown to benefit cholesterol, and fight bacteria. 

Benefits of peppermint: cooling, calming, and soothes digestive issues.

Zucchini & Summer squash salad

I remember having this salad at my friend Alexandra’s bridal shower in 2015. I’m not a huge fan of zucchini, but I remember eating this and immediately demanding to know who made it so I could get the recipe. I have made this many ways and it always turns out great. This recipe is forgiving and delicious! 

Zucchini is a hydrating vegetable along with cucumber, celery and lettuces making it a great choice for summer months. It is also an excellent source of vitamin C. The other salad ingredients offer polyphenols and antioxidants from the lemon, basil and parsley. Zucchinis and basil are in season and abundant right now, so it is a perfect time to try making this recipe. Eating fruits and vegetables in season increases their antioxidants and nutrient richness.

Cauliflower thins

These may not be new, but they’re new to me and I have been loving them, especially for breakfast. I heat in a pan with some olive oil or butter. Once browned, I remove then cook eggs in the same pan then enjoy over the cauliflower thins. Made with cauliflower, egg whites, and parmesan cheese, these are a clean keto option without gluten. I have been monitoring and increasing my protein intake this summer and Cauliflower thins have 9 grams of protein per serving which boosts my breakfast protein amount. I found Outer Aisle in Costco and have seen these available at Trader Joes as well.
